When I watched the Trilogy of "The Lord Of The Rings" I thought the "Elfin Bread" Sam and Frodo ate when going to Mordor was a fabrication. You know, something that doesn't really exist. I may have been wrong. What I have discovered is an amazing seed that contains a huge quantity of nutrients in a very small package (seed size) and I'll bet you have, or have seen the plant that this seed comes from... Chia Seeds, from that stupid looking clay figure with green hair. These things are one way to pack a lot of food value into many of your recipes without a lot of fuss. Here is a recipe for Vegan Chia Brownies that packs a lot of nutrients in a small package.

Recipe: Vegan Chia Brownies

This is a VEGAN version of a simple, one-bowl brownie recipe that makes use of the Chia-Brown Rice Flour. Super easy! This recipe makes a moist, but not too-fudgy brownie that adapts well to add-ins such as chia seeds and cacao nibs. We made a batch of this at the office and it was all gone within 10 minutes!! We hope you try it out!

Ingredients:

* 2 cups chia-brown rice flour
* 2 cups sugar (try honey for healthier version)
* 3/4 cup cocoa
* 1 1/2 teaspoons baking powder
* 1 teaspoon salt
* 1 cup water
* 3/4 cup applesauce
* 1/4 cup vegetable oil
* 1 teaspoon vanilla extract
* 1/4 teaspoon almond extract
* 1/4 cup whole chia seeds
* 3 tablespoons cacao nibs

Directions:

1. Preheat oven to 350 degrees F.
2. Spray a casserole dish (or 9" X 13" baking pan) with PAM or canola oil spray.
3. Mix together all dry ingredients in a large bowl. Add all the wet ingredients and stir well.
4. Spread in the oiled casserole dish and bake 25 minutes, or until the top is dry and the sides pull away from the dish slightly.
5. Allow to cool completely, then cut into squares.

*optional: sprinkle some more chia seeds and cacao nibs on top 10 minutes through the baking time.

Anti-Aging and Anti-Cancer

The darker the color of a fruit’s skin, the higher the concentration of these anthocyanins. These compounds have been found to act as powerful anti-oxidants, and research has shown that aside from their anti-aging and anti-cancer properties, they are additionally useful in preventing heart attacks, protecting the body from the spread of bacterial infections, mitigating the effects of diabetes, easing inflammation, and thwarting the development of neurological diseases. The levels found in an acai berry are equivalent to over 10 times the amount found in red grapes. For this reason, a single serving of acai berry juice contains far more anthocyanins than a glass of wine.

The amount of anti-oxidants in a certain fruit or berry is determined by its Oxygen Radical Absorbance Capacity, or ORAC. The recommended daily allowance for a healthy person is 2000 to 3000 ORAC units. In one study, people who took acai juice were shown to have a much higher blood antioxidant capacity only two hours after drinking. Such quick acting potency is one of the reasons that are behind acai’s growing reputation as an anti-aging food.

The link between anthocyanins and cancer is currently being thoroughly explored by scientists and researchers. After promising results in lab and animal testing, human trials have now begun to test their effect on tumors of the esophagus, prostate, and colon. Extracts from the acai berry have been shown to slow down the growth of leukemia cells, and promote lower levels of bad cholesterol.

Despite all of the acai berry’s benefits, many unscrupulous attempts to make a quick profit on it have resulted in many so called acai-derived products on the market.
